What is the wet towel for in a Japanese restaurant?
Your hands, before the meal. The oshibori is handed over hot in winter and chilled in summer, and it is not a face towel or a napkin — wiping your face with it, or the table, is what marks someone out. Use it, fold it, and leave it beside your place.
